Caesar salad with Peking cabbage and chicken
Ingredients
Chinese cabbage – 1 cabbageCooked chicken breast – 0.5 pc.
Tomatoes – 5 pcs.
Hard cheese – 5 tbsp.
Baton, baguette or other white bread
Garlic – 1-2 cloves
Olive oil – 1 tbsp.

In our area in grocery stores at any time of the year available Peking cabbage, so I began to replace with it more and more often a leaf salad iceberg or romaine in the salad “Caesar”! I cook practically any variation of it with Peking cabbage: with shrimp, with bacon… You can see a collection of Caesar salads collected on this site.More often than any other option on our family menu, “Caesar” with chicken and, in my opinion, with Peking cabbage, it tastes very harmonious. I really like to make pastrami with chicken breast, its juicy pieces are perfect for salads! Chicken meat cooked in any way is also good: baked in the oven, boiled in water or steamed, etc.
Take a Caesar dressing recipe or make a mayonnaise-based sauce with garlic, lemon juice, Worcester sauce or anchovies and hard cheese…
For the Caesar salad with Chinese cabbage and chicken, prepare the ingredients according to the list.
Prepare croutons of the desired size and shape from white bread. You can cut the loaf or baguette into cubes or thin slices. Ciabatta can be simply torn into slices by hand. Brush or brush the breadcrumbs with olive oil and sprinkle with chopped garlic. Dry the breadcrumbs on a baking tray in the oven.
Cut the chicken breast into thin slices. Here is the pastrami, for which I took a curry mixture as a spice.
Wash and dry the Chinese cabbage. Then slice the leaves. If you like, you can chop them all or just the leafy part of them, removing the thick veins beforehand.
Grate some hard cheese. This version takes Irish white cheddar, and traditionally Parmesan is used, which is what gives the flavor, but the flavor analogues of Parmesan will do as well.
Assemble the salad portion by portion on a flat platter. First, arrange a heaping portion of the leaves of Chinese cabbage, pour about 1 tablespoon of Caesar sauce over them, and sprinkle with about 1 tablespoon of grated cheese.
Arrange the slices of chicken meat and tomato.
Pour the second portion of the sauce over the salad. Serve at once, accompanied by crispy croutons and a good sprinkling of grated cheese.
