Dublin Coddle

For the recipe you will need:

  • sausages – 500g
  • bacon – 250g
  • meat broth – 300ml
  • potatoes – 6 pcs.
  • Onions – 2 pcs.
  • salt, pepper – to taste


To prepare Stew with Sausage (Dublin Coddle) you need. Cut bacon into cubes. Bring the broth to the boil, put in it sausages, bacon, put the lid on and cook over low heat for about 5 minutes.

Place sausage and bacon in another container.

Cut each sausage into 5 pieces. Peel potatoes and cut into thin slices. Peel onions and cut into rings. In a low saucepan, place a layer of potatoes, then a layer of onions, next a layer of sausages and bacon.
Repeat the layers until the products run out.

The last layer should be made of potatoes. Pour the broth over everything, and season to taste. Cover the pot with a lid and stew over low heat for about an hour. Then place on plates and serve at once.
