Light vegetable soup
Ingredients
Broccoli – 8-10 floretsGreen beans – 2-3 handfuls
Carrots – 1 pc.
Onion – 1 pc.
Sweet peppers – 0.5-1 pc.
Tomato – 1-2 pcs.
Lemon – 0.3 pcs.
Ground paprika – as desired
Water – 1-1,2 l

Such a light vegetable soup is especially suitable for days of dieting. It can replace one or more meals a day. Vegetable soups restore water metabolism, improve gastrointestinal function and cleanse the body. For weight correction, their purpose is that a lot of energy is spent on digestion of vegetables.This soup should preferably not be salted, but it can be improved with spices. Ginger root, garlic, peppers, and spices are especially good. In this version I have paprika and lemon juice.
To make the light vegetable soup, prepare fresh or frozen vegetables according to the list.
In the boiling water throw chopped onions and carrots. Since the soup is a diet soup, no vegetables are pre-fried.
After about three minutes, add the broccoli florets and green beans. It doesn’t matter if they are fresh or frozen.
After the next boil, add the bell bell pepper and tomato slices to the pot.
Turn down the heat and simmer all together for another three minutes. At the end of cooking, add spices (paprika and lemon juice) and let the soup stand for five minutes. If the purpose of the soup is not a strict diet for weight loss, but just a little unloading, you can improve it with a spoonful of sour cream, vegetable oil or grated cheese…
The light vegetable soup is ready.
