When the ginger infusion has cooled to about 30 ° C, add dry fast-acting yeast and stir until it is completely dissolved. Add lemon juice.

Add filtered water to the ginger infusion (so that the total volume is 2 liters). Pour the liquid into a plastic bottle. Leave it in a warm, dark place for 2 days. If the room is not completely warm, the process can be delayed. The seal of the bottle and its inflation will tell you about the readiness of the drink.

Transfer bottles to refrigerator for complete aging (24–48 hours). All that remains is to carefully open the cap (be careful: the drink under pressure can go over the edge of the bottle). Strain the ginger ale through several layers of cheesecloth. Pour into storage containers and seal with lids. Store prepared ginger ale in the refrigerator.
