Rinse the meat thoroughly in cool water, then dry it with a napkin and rub it with salt and pepper.
Sprinkle with thyme, chopped zira and leave to marinate for a couple of hours.
We will bake the meat in a heated to 200 degrees in a heat-resistant pan with a lid or in a baking bag for about an hour.
Then open the lid or, if it was a bag, cut it from the top and keep it in the oven for about 10 minutes until it is crispy.
