To make lemon-honey jelly, you need to take lemons, honey, water and gelatin.
Wash the lemons, cut off their zest (without the white undercrust) and finely chop them.
Pour 0.5 cup of cold boiled water over the gelatin and leave it to swell for 30-40 minutes.
Pour the remaining water into the pot, pour in the zest and boil it for 15 minutes.
Strain the decoction.
Melt the gelatin in a water bath.
Squeeze the juice from the pulp of the lemons and strain it.
Pour the juice and gelatin in the decoction of zest, slightly warm the mass.
Cool the mixture to a temperature of 40 degrees and pour honey into it.
Stir everything thoroughly until the honey has dissolved and cooled to room temperature.
Grease jelly molds with olive oil.
Pour the jelly mixture into the molds and put them in the refrigerator to solidify.
Carefully separate the frozen jelly from the walls of the form and put it on the sockets. Serve in portions.
