The pancakes I want to suggest differ from the usual pancakes only in their crispy cheese crust and pronounced cheesy flavor. They would be perfect with sweet tea or instead of bread with soup or chowder. The dough is made with the same milk, flour, eggs, and butter. The presence of cheese for frying makes these pancakes special.
So, pancakes with cheese crust…
Pour the milk into a bowl and beat the eggs. Whisk with a blender until smooth.
Then add the sifted wheat flour. Add salt and sugar.
Whisk again with a blender to make a smooth liquid batter without lumps. You may need to add more flour if the dough is too liquid. If it is too thick, add water.
There are varieties of cheese that do not melt when fried, but instead create a ruddy crust. For example, jaloumis. Grate such a cheese on a coarse grater.
It is better not to add cheese to the batter, but to sprinkle the fried pancake on top.
When the pancake is fried on one side, flip it with the cheese side down and continue frying like a normal pancake. Put the finished pancakes in a plate and cover them so that they do not dry out. Ideally eat them hot. If you add garlic and chopped herbs to the batter, the pancakes will be brighter in appearance and more savory.
