Step by step recipe with photoI offer you a recipe for cooking a pork knuckle chłodnik. Of course, every housewife has her own favorite recipe for jellied pork knuckle, but I will risk to offer my own. Usually for cooking I take the knuckle of a hind leg of pork, it is more fleshy and rich. If I make it from the front leg, I also add chicken or pork chops.
So, to make a delicious pork knuckle chłodeche we will need: pork knuckle, onion and carrot. To serve, I will use fresh horseradish root.
Wash the pork knuckle properly, I peel the skin with a stiff brush. Pour about 2.5 liters of water, put whole peeled onions and carrots. Vegetables lighten the broth and give a delicate flavor. Do not forget to salt.
Bring to a boil, remove the foam, turn down the heat to minimum and simmer for 4 hours. The broth should stir just a little. After the time has passed, we take out the meat and bones, and strain the broth. The vegetables are thrown away, we won’t need them.
Separate the meat from the bones, finely chop.
Place the meat in each container for the future chłodnik, carefully pour the broth on top. Cool slightly at room temperature, then put in the refrigerator to solidify. If the broth is too much, I recommend just adding chopped garlic, sprinkle with herbs and drink it hot with pleasure!
Such a rich broth is very useful for people after fractures, teenagers and young people for bone strength.
