Rice with vegetables and chicken
IngredientsRice – 150 g
Chicken – 600 g
Pumpkin – 300 g
Bulgarian pepper (red) – 3 pcs.
Ginger root (fresh) – 2 tbsp.
Barberries (optional) – 3 tbsp.
Curcuma – 1
Garlic – 4 cloves
Ground paprika – 1 tsp.
Rosemary – 1 tsp.
Mayonnaise – 2 tbsp.

Delicious spicy chicken in the perfect marinade. The good thing about this dish is that you don’t have to fuss with it – you put everything together, put it in the oven and in 40 minutes the delicious dish is ready.
So, rice with vegetables and chicken…
It doesn’t matter what chunks of chicken you’re marinating. It will be a whole chicken carcass, cut into pieces, single pieces of chicken, or wings. Put the pieces of meat in a large bowl. Add chopped ginger root, turmeric, paprika, garlic and rosemary. Salt and season everything with mayonnaise and ketchup. I also added barberry berries, but that’s not necessary. If you still want exotic but no barberries, add goji berries, they are now sold everywhere.
Now stir everything so that the marinade evenly coats the chicken pieces. Leave the chicken to marinate for 30 minutes.
While the chicken is marinating, prepare all the other ingredients. Wash and slice the pumpkin and bell pepper. Place them on a baking tray.
Rinse the chickpeas soaked in the evening, put them in a pot. Chickpeas should be boiled until they are ready. It boils for about 30 minutes. Since I had rice in bags, I boiled it together with the chickpeas. I generally delighted with this simple invention of mankind. Rice is always crumbly, the main thing is to observe the cooking time.
It’s time to put the chicken on a baking tray. Place the pieces in a single layer on top of the vegetables and put the tray with the chicken in the oven preheated to 200 degrees for 40 minutes.
This is how it will be when it’s cooked.
Place the cooked rice and chickpeas directly into the baking tray and stir to soak the rice with the juices from the chicken.
