Roasted zucchini salad

Step by step recipe with photoIf you like zucchini, then this salad is sure to please your palate. The classic combination “roasted zucchini – garlic – mayonnaise” here is complemented by a tomato and a boiled egg. Thanks to the tomatoes, roasted zucchini salad is juicy, and the egg makes it very filling.
Wash the zucchini. The younger they are, the tastier the finished salad will be. Cut the zucchini into discs about 1.5 centimeters thick. Then fry them in vegetable oil on both sides.
Peel the garlic. You can either pass it through the press, or, as I did, finely chop it.
Slice the tomatoes into slices. Add to the cooled roasted zucchini. Squeeze lemon juice into the salad.
Salt and add ground black pepper. The amount of pepper is up to you, whether you like it spicier or less.
The green onions will give the salad a fresh taste. Finely chop a feather of onion.
Chop the boiled eggs finely.
Dress the salad with mayonnaise.

Delicious and fast roasted zucchini salad is ready. Decorate the dish with finely chopped parsley.
